Paradiso, the Barcelona bar ranked No. 4 at the latest World's 50 Best Bars, unveiled Oltre earlier this month, its first new menu in two years. Drawing on surrealism, the lineup pays tribute to the dreamlike worlds of Salvador Dalí and Joan Miró, where art, illusion and mixology meet.

Created by founder Giacomo Giannotti and his team, Oltre (which means "beyond") brings together 18 new signature cocktails, including four non-alcoholic creations, alongside seven house classics. Continuing its exploration of the no-alcohol movement, the bar has also taken a lower-ABV approach across many of the recipes.

Collaboration with the local creative scene sits at the heart of the project. The team worked with artists, artisans, cooperatives, farmers and companies from Barcelona and across Catalonia, on everything from the conceptual storytelling to the bespoke glassware and ceramics.

Among the menu's highlights:

  • Piccolo e Grande, which brings together gin, elderflower liqueur, an apéritif bitter and manzanilla sherry in a hand-blown glass with a distorted shape
  • Alba, which pairs tequila and mezcal with mustard, tejate and wasabi flowers, served in two stages with an edible paper that opens like a flower
  • Its non-alcoholic counterpart, Source, combining fig leaf distillate, white tea and mineral water
  • And Illusion, blending Scotch, banana, coffee and sherry in a vessel that shifts from opaque white to deep black
