Nordic Ethanol, the organic craft distillery founded in 2018 by former Michelin chefs Nicolai Sivgaard and Jonas Wulff, has unveiled Velour. Drawing on their background, the venue takes a Michelin-style approach to cocktails built on an ambitious idea: every spirit, bitters, liqueur, soda, and other ingredient is made in-house at the distillery.

The stated goal is clear:

“Cement the Danish bar scene among the best cocktail bars in the world, just as the culinary scene has done for many years.” and “represent the best Denmark has to offer on the liquid culinary scene”

To that end, the bar, overseen by Emil Ziirsen, offers an exclusive menu of 14 cocktails that are 100% organic and locally sourced, presented in a hard-copy book print featuring hand-painted illustrations. The list goes through a rigorous three-stage R&D process at the distillery, so the menu changes no more than twice a year.

Velour has seating for 42 guests, plus seven at the bar, and combines professional expertise with a warm welcome: a personal greeting at the door from an experienced server, assistance with coats, and table-only service (no ordering at the bar).

Prices range from 135 to 175 Danish kroner (about €18–23) per cocktail, which includes complimentary sparkling water and snacks (nuts and olives).
