Paradiso Sustainability Summit unites the World’s Best Bars in Barcelona to drive sustainable change
Giacomo Giannotti, co-founder of the iconic El Born cocktail bar, has unveiled the highly anticipated lineup of seminars, with some of the world’s most innovative bartenders coming together to tackle the biggest issues of Sustainability faced by the global drinks industry.
Giacomo Giannotti, founder of Barcelona’s acclaimed cocktail bar Paradiso, has announced an exciting schedule of panels for The Paradiso Sustainability Summit 2025. Taking place on Sunday 30th March in the sustainable event space Palo Alto, the programme will include some of the biggest names of The World’s 50 Best Bars, such as Bar Leone, The Cambridge Public House and Zest, uniting them to tackle some of the biggest issues of environmental and social sustainability.
Giacomo and the team have carefully curated a programme which covers a range of important industry topics. Environmental sustainability will be explored in talks like ‘Waste is a Failure of Imagination’, alongside panellists Kevin Kos renowned bartender and content creator, Iain McPherson co-founder of Panda & Sons (Edinburgh, Scotland), Hyacinthe Lescoët of The Cambridge Public House (Paris, France), Lorenzo Antinori founder of Bar Leone (Central, Hong Kong), Ara Carvallo of Barra Mexico, organizer of the summit Giacomo Giannotti, and moderated by MD of The Sustainable Restaurante Association, Juliane Caillouette-Noble. Additionally, the seminar ‘From the Farm to the Bar’ will look beyond agricultural trends with panel members Hampus Thunholm of Röda Huset (Stockholm, Sweden), Cesar Montilla of Dr. Stravinsky (Barcelona, Spain), Sasha Wijidessa of Fura (Singapore, Singapore), Emanuel Minez of Red Frog (Lisbon, Portugal), John Stirling owner of Arbikie Distillery and Global Brand Ambassador of Torres Brandy Brand, Cristóbal Cofré and moderated by Juliane Caillouette-Noble. Finally, Mario Villalón of Angelita (Madrid, Spain), Alex Francis of De Vie (Paris, France), Michele Mariotti Head of Bars at The Gleneagles Hotel (Auchterarder, Scotland), Stephanie Jordan founder of Avallen Spirits and Giuseppe Baldi National Key Account Manager for Ecospirits will explore the environmental impact of ice and glass in cocktail culture in the panel ‘Glass & Ice’ moderated by Danil Nevsky.
Social sustainability will be tackled in the talk ‘Empowering People’, moderated by co-founders of The Pinnacle Guide, Hannah Sharman-Cox and Siobhan Payne with panellists Giacomo Gianotti alongside Bob Nolet who is eleventh generation Master Distiller from the family lineage behind Ketel One, Demie Kim co-founder of Zest (Seoul, South Korea), Chris Beaney founder of La Borracha (Accra, Ghana), Silvia Alining founder of Aldea BCN and Hospitality Educator Max La Rocca. Additionally, co-founder of Paradiso and founder of MS BarTrends Margarita Sáder, founder of Equal Measures UK Deano Moncrieffe, founder of Quixotic Project Carina Soto, winner of this year’s 50 Best Bars Roku Scholarship Calliope Draper and Raúl Navarro Bazán Brand Ambassador of The Macallan will explore representation in bars in the panel ‘Representation’ which will be moderated by founder of Celebrate Her Anna Sebastian alongside The Macallan. Lastly, ‘Mindful Mixology’ moderated by co-founder of The Cocktail Lovers, Sandrae Lawrence will tackle the growing popularity of no-low ABV with speakers Tim Etherington-Judge from HealthyHospo, Giorgio Bargiani from the Campari Academy Advocacy team and Assistant Director of Mixology at The Connaught (London, England) and shochu and spirits educator Elvira Aldaz.
When they’re not enjoying the stimulating programme of seminars, guests are invited to explore the Paradiso Cocktail Festival, within the same venue. It is the perfect opportunity to enjoy cocktails from some of the world’s top bars such as Angelita, Bar Leone, Fura, Panda and Sons, Paradiso, Red Frog, Röda Huset, The Cambridge Public House and Zest.
